Now that we're into a couple weeks of Corvfefe what have you been creating in the kitchen?

I made waffles this morning using my standard yeasted waffle recipe with some experimentation - I was out of real milk, so I used almond milk and on a whim threw in a bit of acorn flour and a tiny bit of cardamom. They were phenomenal; buttery and nutty and delicious
 
Spicy sourdough cheesy beano for brunch today - to think horrible school cheesy beanos put me off them for decades.

I'll use plant milks all the time in waffle & pancakes if that's all I have on-hand; they generally work well. Usually keep powdered milk in the panty too which works fine as an ingredient but not really on it's own.
 
Did a palak tofu last night that was pretty good. I'll un-simplify the recipe next time, and probably swap in paneer instead of the tofu (it was from a vegan cookbook).

There was definitely some sort of synergistic magic between the almond milk and acorn flour!

Burgers today. Bacon, spiced cheddar, dipl pickles and Caribbean sweet sauce.

Bbq out tonight.

Managed to stand on a few stray fragments of kindling with my bare feet so I've got that to look forward to in the morning

that looks great. I haven't had a steak in ages, probably the last time was on a camping trip about 2 years ago. I'm gonna pick one up tomorrow thanks to your post

We do steaks at least once every 2 weeks. Managed to get my wife to go from well done to medium / medium rare.

My male friends give me shit for posting food pics on FB and whatsapp but guess who they come to for tips when they've got a nice bit of steak to cook and don't want to waste it. :embarrassed:
 
Yesterday I tried making sourdough bread again. It took the sponge eight hours to rise. Then two more hours of rising after flour and kneading, then it needed to be shaped and rise for two more hours so I just left it in the bowl overnight. I took it out this morning, turned it out onto the counter, and put my hands into a mess like what you see in a taffy puller. I managed to scrape it off into the trash.

So after that I figured out the secret to making sourdough. Throw the fucking starter in the trash and just make bread with dry yeast. No caring for the starter, no waiting all day for the sponge to rise, and a lot less sticky mess.
