Now that we're into a couple weeks of Corvfefe what have you been creating in the kitchen?

it's panettone season. This is using my go-to sourdough panettone recipe, with DIY candied citrus peel (although I got lazy and didn't source pearl sugar for decorating or do any glazing)

made some moo goo last night, turned out great. For some reason the asian grocer I went to only seemed to have sour bamboo shoots and the thin sliced ones. I wasn't sure if the sour ones would givethe goo a weird flavor so I opted for the thin ones....also this one called for bok choy so I got a bag of 10 baby boks for like 2.99 , ended up using 4.
I've never really done proper Chinese cooking as indian curry is more my thing and in the past I did half ass stir fry BS but I gotta say this tasted like from an actual restaurant maybe it was the xaoching rice wine and oyster sauce and corn starch :shrug:

Went a little crazy. Sweet potato flat bread (from Sysco), pulled pork (pump house bbq), caramelized onions, cherry tomatoes, fried shallots, balsamic reduction.
Not pretty but delicious.

"angry" chicken apparently. From a cookbook I got Mrs jbj for Christmas.
Chicken thigh with an Indian marinade. It was ok but could have made better myself. Salsa, soured cream and spicy rice on the side.

I've never nailed a chili before but this is looking promising. Got it in the ninja stewing away for me coming home from the football. My tongue is still tingling nicely from a little taste test while it was simmering.

Pork and beef mince, almost a full bulb of garlic, tonnes of onions (small dice for trinity, thin slices that will hopefully hold up for texture).

Moroccan Kofta sandwich. Lamb and beef. Fresh tomato and red onion. Chiabatta. Yogurt garlic dill sauce.
Kofta (Kefta) spiced with cilantro, mint, cinnamon, paprika, cumin, coriander (yes I'm aware, fresh and ground seed) and cardamom.
 
Tried coq au vin blanc this weekend. I am a fan of the red wine variety, but turns out the white wine variant is also delicious and fun to make.

It may not be the most photogenic dish, but man was it good.

It’s a great way to make chicken interesting and fun. I thought the blanc version was homier compared to the red, both are great.
Last time I had the red was at a dinner party probably 25 years ago. Honestly never knew there was a blanc. Gonna have to check that out.
Funny memory of that dinner party, the host played guitar and wrote a song about his evil cat to the Sex Pistols tune...

Pal was over for pizzas, hot tub and wine last night.

I've been closing in on nailing my dough. Upped hydration to 65% and lowered the salt .5% as Mrs jbj said the last one dough was too salty.

Dough didn't taste as good so I'm going to knock the hydration back down to 63% and keep the salt as is.
