Now that we're into a couple weeks of Corvfefe what have you been creating in the kitchen?

Apart from pizzas Mrs JBJ has been doing most of the cooking of late but I put this together earlier. Tasted great and was super easy.

I've been so busy I keep forgetting to post some of the yummy stuff I've made. Got into a food rut a few weeks back but have been doing better lately.

Last night, I stir fried shrimp in garlic butter like they do in Mexico. It turned out even better than I expected.
 
How long at what temp? (I can convert C to F so no worries. :)


No idea about the temp, it's gas so I just set it on the lowest possible temp and let it do it's thing.

Took about 3 hours to get to 90c. I forgot to put a pan with liquid in the bottom so the bark was a bit too crispy in places but other than that it's was great.

Had it on homemade bread with smoky mustard coleslaw and a skoosh of sriracha.

Looks good though if a bit dry but it could just be the picture.
Got a recipe for that slaw? I'm intrigued.

I'm stuck in non moving traffic on the way home from the football looking forward to demolishing another plate of it when I finally get home.
 
Put the new mixer through its paces today. Got some amazing looking pizza doughs balled up and cold fermenting in my beer fridge until Monday or Tuesday.

Decided to give some bread a go from a book O recently bought. First time I've done anything in the Le Crueset dutch oven and it's turned out great.

That bread is hilariously identical to the cover photo. That never happens.

The second loaf of even closer to it :grin:

Don't get me wrong it's a lot more involved than chucking stuff in a bowl, letting it rise them baking but they've turned out great.

I bought the book for it's pizza recipes but I think I'll work through the bread ones too after this success.
 
Brazilian fish stew. Stupidly easy and really good. Mrs JBJ finished everything even though it was a bit hot for her.

I need to make that fish stew again. Fish van comes round tomorrow :thu: I was going to try Cullen Skink but it's absolutely roasting here just now so a creamy heavy fish stew might not be the best of dinners.

Made more bread this time with an overnight biga. Timings were way out for bulk fermentation / folding according to the recipe but it's turned out superb. I've just had an end piece with some extra mature cheddar and it was delicious. Really nice crispy crust but the inside is light.

The Ankarsrum mixer is spectacular. I left the biga in the bowl overnight then put it on high this morning while I walked Lola and by time I got back I had a sticky but pliable dough.

Quite different to the 1 day recipe from my book. Like pizza dough I can see myself going down a rabbit hole here.

Tried to make tomato soup yesterday and it was terrible. Tasted like a cupa soup. Can't remember the last time I had a kitchen fail but this was definitely one.

Tonight I am making my first-ever attempt at chicken pot pie. Pray for me…

The chicken pot pie came out pretty well. It needed more salt/seasoning was the main thing to improve next time. And it was way too much for the 3 of us. Next time I’ll do a half batch and use individual portion pans.

The crust was delicious.
