Now that we're into a couple weeks of Corvfefe what have you been creating in the kitchen?

I made pasta from scratch last night on a whim. My niece is coming over Saturday and we are doing a lasagna entirely from scratch so I wanted to make sure I could still make pasta. I haven't done it since culinary school almost 25 years ago.
It turned out amazing. So I drunk ordered a pasta roller last night. lol

Salmon tikka with mango salsa and salad.

Outstanding. Seriously I think it might be the best fish dish I've ever had at home or eating out.

Mrs JBJ made it, she doesn't give a shit about plating but it was an easy 10 out of 10.

I’ve been known to gripe that I can never find the monster beef ribs at the grocery like you get at a bbq place. So today when I saw the BEEF DINO RIBS in the meat counter, I had to get them.

Smokin in the rain! Dinner won’t be until 7 when Mrs. Roach gets here from Houston; by then these monsters should be nice and tender.

Football season is fast drawing to a close so I made these pizzas based around Bovril and mince pies you would have at half time.

Really good.

It’s really hard to find Bovril as a topping option at pizzarias around here.

They need to get with the programme.

Very concentrated mix of Bovril, worcester sauce, some honey for sweetness / balance out the salt, tomato paste for umami.

Simmer to thicken.

Mrs JBJ decided to use it for the other pies so it must have been good.

I'm thinking next on the list has to be an @munchybox pizza.

Making some vegan chili right now. Will be serving that as the meatless option to the London Broil I'll be making tomorrow.

Had my parents round tonight for the first time since NYE 2019.

I did steaks, garlic butter mushrooms, gochujang hasselback potatoes and sous vide glazed carrots. Bottle of malbec to wash it down and banoffee pie for dessert.

Steaks turned out great. Veg too. Potatoes coukd have been smaller, I got them from the new Polish deli near us and they were massive.

Got an absolute steal on the steaks. 2x ribeye, 2x sirloin - 2 inches thick for a tenner from the butcher next to my work. Stevie is a G. He's doing full fillets for £45 all month so I'm going to pick one of those up next week.

My butcher was doing a nearly 2kg fillet for £45. I bought it and split it with my neighbour.

Sous vide with firecracker potatoes, grilled asparagus and a lager pan sauce.

I’ve been lazy in the kitchen lately, but tonight got motivated enough to do halibut with red pepper sauce and risotto.

Man I love risotto, and it’s one thing that just tastes better to me at home than at a restaurant.

Ahhh, too late to ask if you were going to keep it authentic with squirrel.
LOL. It ended up storming that day so I didn't do it at all. I have had it with squirrel though. It all blends together so you can't really tell.
My wife's family has this recipe they call Burgoo. It takes all day to make and it makes like 30 gallons that they all split up and freeze. We did one about 10 years ago. Most of the old timers have passed on since then but I brought it up recently and the one main cook was very excited about doing it again. His name is Leroy and I shit you not he looks like Kenny Rogers.
Burgoo is a stew that everything is ground up and cooked together. Chicken, beef, pork, turkey, corn, beans, carrots, peppers, onions and god knows what else is in there. We cook it in this massive kettle over an open fire and it has to be stirred constantly for like 8 hours. It is SO GOOD.

"If it walked, crawled, or flew, it goes in burgoo."

I think I need to give this one a go.
