I'm making my own Italian Beef

One of the best Italian beef stands (Johnnie's in Elmwood Park) will literally laugh at you in shame if you ask for cheese. Portillo's is the only place I know that serves them with cheese. But that's a large corporation. Independents don't offer it. I've never seen mushrooms offered anywhere in the city. And I'm about as local and purebred Chicago as they come.
 
PK speaks the truth. There is no place for cheese on an Italian beef.

If you want to use cheese, then make a Philly cheese steak.
