porterhouse?

Poor old Geordie's array...
My good lady ordered a few ribeyes from some stupid online thing or other and they sold out so they gave her 4 porterhouse steaks instead.

I must say they look amazing.

About an inch thick each - any tips on how to cook these bad boys?
 
Sous vide. Porterhouse is too expensive to risk overcooking it. If you don’t have an immersion cooker go buy one, they’re amazing. Otherwise use a meat thermometer to roast the steak until it’s about ten degrees from what you consider done and then sear it with a grill or skillet.

sous vide aside, I find a smoking hot (you need a good range hood) cast iron pan better than a grill.

Agreed - but more than just a good range hood - you need open windows and a temporarily deactivated smoke alarm. Or put the pan outside on the grill (the preferred method for blackened steak).

Medium-well to well done it is :)

I posted the above in a joking manner, but I personally find it gross to cut into a steak and have blood gush out of it (anything less than medium). I do not want my steak mooing as I eat it :embarrassed:
