Alright, alright, enough fun-poking. A good pancake is pretty good, but all but the absolute best of them need something delicious mixed into the batter. Blueberries and pecans are my favorites. Also, if you do not use real maple syrup, you are an asshole who deserves to be stabbed by an IHOP waitress.

First time someone brought it out to me, I asked why they brought me a pancake... They said it's cornbread. And it's everywhere.

These aren't as "corny" as corn bread but I swear there is a hint of corn meal in them. The best pancakes I have ever eaten are at a place in Jamestown, RI. They are blueberry sourdough pancakes and they actually taste like sourdough, unlike most sourdough bread I have eaten.

I'm making Christmas dinner at my in-laws this year. I've yet to decide on the menu. I don't think I'll be making pancakes.

Although, Swedish pancakes with lingonberries are pretty good.
