Lately I've noticed "uncured" or "no added nitrates" on ham, bacon etc. I thought this could be a trend but reading up on it, it sounds like a bunch of BS and a marketing ploy. I hope

It is a BS trend, meaning that 'natural' salts such as celery salt was used to 'uncure' the meat. I'll take the nitrates, thank you very much.

Nitrates are nitrates.....if they are from celery juice/powder or curing salt, they're still nitrates.

Pork belly is already pretty popular, but I'm thinking beef/pork cheek are due for an explosion in popularity pretty soon. What I'd really love to see is a head cheese renaissance.
