I was referring to the pre-electric icebox that used big blocks of ice to keep the food cool. Ideally with ice from New England rivers in the winter. (Smile) My grandmother had one well into the 60s, maybe even into the 70s.I don't do it as often as I'd like, because it's a whole process and a pain in the ass, but I've made my own ice for cocktails. Excellence can be rewarding.
The best bartending book I've ever read is Liquid Intelligence. The first chapter is all about ice.
