Im eating alot of grilled cheeses and ramen noodles lately....

I always use pepper jack and oatnut bread and real butter. Tomato only in season.

Toasted oatnut bread makes everyone think you're a culinary genius. I can make something as simple as a ham and cheese sandwich, but if it's on toasted oatnut bread people tell me it's the greatest thing they ever ate. :embarrassed:

We just made this last night, it's simple, quick and delicious:

Ingredients


8 ounces fresh mozzarella, sliced
10 to 12 basil leaves, torn
4 slices french bread
Pinch salt
Pinch cracked black pepper
2 to 3 tablespoons extra virgin olive oil

Preparation

Preheat a grill over medium-high heat.

Assemble the sandwiches by arranging some sliced mozzarella and basil, sprinkled with salt and pepper, between 2 slices of bread. Repeat for the remaining 2 slices of bread. Brush both sides of the sandwiches with olive oil. Put on hot grill and cook until the cheese is evenly melted, about 1 to 2 minutes on each side. Transfer to serving plates and serve hot.

Sounds just great, but you fail a tiny bit for not adding a couple slices of prosciutto. Which gives me an absolutely killer idea for a sort of pizza.....

Put an oz or so of extra virgin into a skillet and get it hot. Slice a roll in half.... mebbe even a half a loaf of Italian or French bread. Face down in the skillet it goes, let the bread soak up the oil, and let it brown. Move around as needed so that gets done evenly. While that is working, slice up some tomato, and fresh mozzarella. Chop up some prosciutto... genoa salami or guppies will work in a pinch too. Reduce the heat on the skillet and flip the bread over. On goes the tomato first, then basil, then mozz cheese. Top with meat of choice... salt ...pepper. Put a lid on the skillet and cook about 5-7 minutes so the cheese starts melting. Hmmm.... I may have to do another photo lesson on this one......
