What's for Dinner?!?!?

It's the age old question. My brother and I talk every day and one of the first things we ask each other is "What's for dinner?" (we don't live together, we just bounce ideas off of each other)
So I'm posting this here for ideas. What are you having or did you have for dinner?
Let's keep a running list, I don't care how basic. Post it. I need ideas!
Also, I can cook anything so nothing is out of range.

Last night I made my beef enchiladas. Hamburger meat made up for tacos. Shredded cheese. Roll 3 soup spoons of meat and a hand full of cheese in a soft tortilla place in a baking dish. Take a jar of pace picante sauce and poor over it. Cover with cheese. Bake at 350 for 20 to 30 minutes. Serve with black beans and Spanish rice.
 
I make a menu every week. Here is this weeks dinner menu.

Mon - Spinach Lasagna
Tues- Chicken Katsudon
Wed - Pan seared Ahi Tuna
Thurs - Stuffed Chicken Breasts (from Omaha Steak)
Fri - Steak and green bean stir fry
Sat - Tuscan Chicken soup
 
When we got back from our trip the other day, I made a white bean and pasta thing with rotini, spinach, basil, cannellini beans, sun-dried tomatoes, garlic, olive oil, lemon juice, lemon rind, salt, and red pepper flakes. Top it with toasted pine nuts and freshly grated parmesan. I have a recipe for it, but I never look at it because it's more confusing than just throwing it all together by taste.

I;m making a trip to Denver to visit Dave for a week....when I get stoned I will hit up Munchybox for dinner :drool:

anyway last night i was lazy so I put two Hebrew nationals in the microwave with buns, nuked em' and squirted some mustard and relish on. I had intended to make chicken stew in the crockpot but forgot to pick up chicken broth and i can't be bothered to make a special trip to the store again *spits*

so tonight I will make Chicken Korma instead since I have the ingrediants for that but since I ran out of basmati i will use jasmine because again I ain't making a special trip to the store
 
Friday Mrs JBJ was out and I wasn't feeling great so had a microwave curry, it was rubbish.

Last night: sous vide wagyu tomahawk steak with roast mushrooms, vine tomatoes, freezer tempura prawns and chimchurri.

I managed to put my phone in a cupboard while digging out ingredients and didn't find it until this morning so no pics but it was good f quite fatty.

Loads left so tonight will be wraps or something similar with the leftovers.
 
We ordered in steak dinner last night.

That sounds like it wouldn’t work at all, but it was great.
The steak was a perfect medium rare. I had rice pilaf and Mrs DCF had a baked potato.
We had antojitos as an app. So, I know what’s for lunch today.

Over the last few days I've done potato soup with crusty bread, greek inspired sheet pan chicken with zucchini, red onion, tomato and peppers and I can't for the life of me remember what I had Friday. lol

Sunday was a thing I make that I call white chili that's basically chilies, onions, hominy, beans, bacon, and grilled chicken thighs w/ some chicken broth and spices.

We are having a chili cookoff at work Wednesday for our holiday party. 20 people entered!
I think I'm gonna throw a curveball and do a white chicken chili. Haven't had it in a while and I have a good recipe a friend gave me a few years back.
Hominy is an interesting twist. I haven't had that since I was a kid. I remember we used to call it bloated teeth because that's what it looked like to us.
