I love cooking this dish when we have a group over, because it is always a crowd-pleaser. But TBH, for my palate there are other ways of preparing meat that I like better. It is savory and tender, but I like meat either steakier or spicier.
Of course you do get the bone marrow, which is rich and delicious to mix with the risotto.
But the point is, I just now ate the leftovers from yesterday, and wow. On a tortilla with some leftover green rice, and it was at a whole 'nother level.
