4th of July cookout jam

We had carnitas tacos. yum

That was last night for us...quick pickled onions and jalapenos, queso fresco, carnitas on hot fresh white corn tortillas.

Eh, just grilling some burgers and dogs. Then I'll put in a full evening of worrying that some asshat will set the canyon on fire with illegal fireworks.

i went crazy at the store and bought a jumbo package of Hebrew National hot dogs (it's Costco size) and got fixings to make Chicago, Carolina, New York, Dodger dog (minus the long weiner :embarrassed: and I will be doing the ketchup on it too). I will most likely experiment with others as well. I should be completley dogged out in a few days

I really want to like Hebrew National. Is there a way to cook them to not be so greasy?

Wife is still afraid of beef, from the madcow thing in the 90s. She thinks anything Kosher is safe. Would love to be able to open just one package of hotdogs that isn't Oscar Meyer pork, chicken, turkey.

Fon't they have Vienna Beef over your way? Isn't that the dog od choice in Chicago? I've never noticed HN being all that greasy, at least they don'y have pig snouts and chicket claws in them like the Oscar Meyer do :wink:
 
Did steaks Saturday night. Got fried catfish at a food truck when we went to the fireworks last night. I'm off today so I'm making burgers.

Yes, they do have Vienna Beef here. Wife won't touch them because they aren't Kosher or organic. If they are Kosher or organic, then she emails the company and asks questions. HN passed her rigorous test. But yeah, they are grease city. At least if you boil them or, cook em on a stick over a fire. That's why I asked how you cook them.
