Part of the reason it went to slong was I was trying the technique the guys at Taylor use for stringing their guitars, but I don't have a string changer on a high powered drill like they do so it went a little slower.
You keep using that word. I do not think it means what you think it means.

you don't need a powered drill to do the technique in the Taylor vid. all you need is a crank:

i wind all of my strings, on every guitar, like they do in the Taylor vid. but instead of cutting the string first, i kink it, and cut it after the guitar is tuned up.
Cut the string to length and then wind it under tension so that the wraps go under each other automatically.
did nobody teach you how to string a guitar properly? here you go:
1. put string through bridge.
2. pull string through tuner hole so it has a little tension on it.
3. from the nut, pull the string back to the first fret.
4. kink string in tuner.
5. wind to pitch.
the crank makes it faster, but you could get by without it if need be.
What is the advantage of winding your strings that way?
I do mine this way, and have no plans to change, since this way is quick, easy, and turns any tuner into a locking tuner.

more downward pressure on the string. this way you don't need a 17 degree tilt headstock. it's also not a pain in the ass when you take the old strings off, like the lock method is.
i tune to pitch, stretch the strings, and tune to pitch again. that usually takes care of any tuning issues.
