Why is Tillamook cheese so good?

A long time ago when I lived in Oregon I was by there regularly. I can't remember stopping though. I probably would now if we were in the neighborhood.

Tillamook is OK, but it's no match for any number of artisanal cheeses you can get in Wisconsin...

actually.....that pairing has been around for SOME time. i think it started in France, about 300 years ago

Oka is the cheese to have up here.

The original location is now a corporate run company, but the Manitoba location is still run by Trappist Monks.

That Tillamook looks good. I love aged cheddar. The older the better.
I get 7 year aged cheddar whenever I can.
