Why is Tillamook cheese so good?

Tillamook is OK, but it's no match for any number of artisanal cheeses you can get in Wisconsin...
 
Oka is the cheese to have up here.

The original location is now a corporate run company, but the Manitoba location is still run by Trappist Monks.

That Tillamook looks good. I love aged cheddar. The older the better.
I get 7 year aged cheddar whenever I can.
