What difference does wood quality make?

Here’s a cool video about sitars from Musician’s Mall. It compares a series of instruments from the same maker, with different prices. The different prices reflect the decoration of the instrument, and more importantly, the quality of the wood used. Build quality stays the same.

 
In seriousness, I don't really know a good sitar sound from a bad sitar sound. I could hear some difference between the first one (the #3 model) and the last super fancy one. I'll have to take the guy's word that the differences are worth while.
 
To me #1 sounded the most pleasant, followed closely by #3. #2 sounded like it had dead strings or something. But my ears have very little to go in for sitar tone.
