I’ve been jonesing for a top-notch steak, our usually amazing meat counter at HEB has been a victim of the plague. So I ordered some NY strips from one of those online places. Will report back Sunday, after we have ‘em for Easter dinner.

Welp, they were tougher than the strips I’m used to. Very good flavor, but won’t buy again.

Still a nice dinner to cap off a pretty good weekend.

There's a butcher shop I've been going to since I was a kid. They only sell prime beef, and now carry wagyu a few times a year. Expensive as hell... the imported Japanese wagyu runs about 150 bucks a pound. The prime beef is fantastic, if not nearly as expensive as the wagyu.

I've had American Wagyu (Kobe) as well as one of the middle class rated Japanese Wagyu. It's certainly good, and very rich, but IMO not worth the price of admission.
I've had Certified Angus Ribeye that was better overall.
