I won a chili contest!

My son's fraternity had a father's weekend last weekend.

One of the activities was a chili cookoff. I brought all the ingredients with me. He is in-state about 3 hours away. Prolly should have made it the night before and brought a crock pot. Live and learn.

Found out that it was to be ready by 5:30 at 4:55. not a lot of time to cook chili.

I quickly drove to my son's apartment. I figure I had 20 minutes to cook and a few minutes to transport a pot of steaming hot chili. He had electric range. oh well. At least they get hot! I browned the meat at nuclear high heat. Poured in the 3 other canned ingedients. Had time to bring it to a boil, then simmer for literally 5 minutes. Drove back to the frat house very slowly.

Anyway we won by a mile from what I was told. I tried them all and all were very good.

No big chili secrets.

I used a Durkee chili seasoning recipe on the back of the packet. I substitute the ground beef with breakfast pork sausage. I only used 3/4 of the chili seasoning also. Maybe the secret was in cooking it in 20 minutes. Who knows?

I use ground turkey too. I also use equal parts of kidney beans and hominy.
 
Chili is one dish I never feel like I've nailed and I don't know why.

I can do an OK one but (and not that I ask Mrs JBJ to rate my dishes on a scale of 1 to 10 :embarrassed: ) I've never even come close to nailing it.

Help me out lads. Give me a stone cold recipe for a great chilli because I know it's got to be better than what I've been doing.

The one that used to win at our town fair would load it up with lots of tri-tip. It was almost cheating. It was really good.

I don't know if this is even technically chili. It's called Chili-flavored Turkey Stew with Hominy and Tomatoes and it's really good, easy/fast. Found it 20? years ago, looking for something to use up leftover turkey from Thanksgiving. We liked it so much we wanted to make it even if we didn't have leftover turkey to use up so, 99% of the time I use a 1 pound tube of frozen ground turkey from the freezer. Other changes- in addition to the two cans of hominy I use two cans of kidney beans. I prefer green bell peppers not red and I put the whole pepper in because, what the hell am I going to do with the other half. The 1/4 cup of chili powder is a heaping 1/4 cup. I wish chicken broth came in a slightly larger can. I like shredded cheese and crackers on my chili and a little more liquid would be great but, I don't want to open another can for a tiny bit more.

"Heat oil in a large, deep saute pan over medium-high heat. Add onion and bell pepper; cook until soft and golden, about 5 minutes. Add garlic and chili powder; continue to cook until fragrant, 1 to 2 minutes longer."

Obviously if you're not using leftover turkey, you need to cook your ground turkey first. Cook it till any liquid is gone so, when you put the chili powder in, it gets scorched. 30 to seconds to a minute then immediately add the chicken broth. Stir, scraping pan before you add anything else.
