Yum Woon Sen - Recipes?

The little Thai place in Evansville that we go to occasionally makes a killer version of this.

I've tried a couple of the recipes I found on the interwebz, but none of them has the flavorful snap that the thai joint's version has. Anybody have any good recipes for this?
 
I don't have a recipe, but plenty of fish sauce, lime juice, and chilies are definitely needed.

Is their version stir fried? (I think it would technically be 'pad woon sen' in that case) - if so, a common factor that keeps homemade thai noodle dishes from living up to good restaurant versions is the lack of access to an insanely hot wok burner.
