After giving this careful consideration, I have to go with Max Rebo. He's a blue blues pachyderm, and he doesn't get distracted by politics. He just wants to play and get enough bread to pay the rent.
As a side note, the Star Wars character I'd most like to do wookie-style is Shmi Skywalker. I don't buy that "there was no father" virgin birth crap, she was a nasty little slave girl.
