I've had that once. It was cured and smoked.
It was on a charcuterie board with other smoked stuff and cheese. It was expensive, so I had to at least try everything.

This is tripe. It tastes just as appetizing as it looks. Back in the late 80s, I was at an AGA (association of government accountants) meeting at a hotel and took what I thought was a long spear of eggplant or zucchini with tomato dip, but turned out to be a piece of tripe. It had the texture of a wax candle, and about the same flavor...
