It's like anything else; use the best ingredients you have and you don't need a lot of them. Let the potato be a potato.

A FRICKEN MEN!!!!!!!!!! My old sous chef used to say that. We did a fresh veg medley that we often ran out of because it was such a hit with the customers. We would take fresh veggies, cook them up individually, and only combine them all at the last minute. A carrot tasted like a carrot. Ditto for anything else that was going in.
