The jerk chicken in Jamaica they cut these big steel drums in half and turn them into grills, then chop the chicken, shrimp, clams, and hot peppers and cook them together with beans and rice. Oh holy hell.... So good that even with unlimited free food and drink at the resort we kept going to the chicken shack on the beach. Man oh man......
A friend of mine is opening up shop in Niagara Falls this fall.
She and her husband had a place in Toronto that got rave reviews for their jerk.
He is from Jamaica and has all his family's recipes.
They plan to replicate things in the new place.
