Mmm...Soylent Green.

Actually, it's potato/plantain, and utterly flavorless. Requires a dollop of sour cream and cashews to give it life.
 
Potato soup is always better with some ham cubes in it. Brown the ham cubes up in a pan. Can also brown in maple syrup, if so desired. Gives it a little spark, too.
We make ours with ham cubes, and sometimes some bacon bits on top, some fresh chives and a little shredded cheddar.

Serve with black pepper and plenty of saltine crackers, add to suit personal preference.
 

the recipe sounded good. ginger and saffron. I doubled the ginger and it wasn't enough - the plantain dominates.

added cracked black pepper and more salt today and it was OK. maybe I'll add something hot, and some bacon or ham. those are good suggestions.
