I use a crock pot to cook the ham hocks and make the broth. I just put them in and let it cook overnight. It works well.

You're a girl after my own heart....I'm not a huge fan of slow cookers but I do have one. I'd rather 'slow cook' stove top. I do use my slow cooker from time to time when making things like chili if I'm in a rush and need something prepared for an evening. Even then,I usually take out the slow cooked goods and simmer them stove topped whilst adding ingredients to finish it off..

Bavarian Kraut is legit Caraway seeds and juniper berries... Mmmmm. wish I could run down to a bräuhaus and get an order of the pork knuckle with kraut and dumplings right now.

The wife has been making her own sauerkraut. It's easy as hell, and it is so much better than the stuff you get from the store.
