Pumpkin Coconut Lentil soup with smokey meats

It was a rainy day so 1wife and I just invented a delicious soup. She remembered pumpkin lentil soup from her childhood in Brazil, so we kinda went from there. Made a huge pot and put a bunch away in the freezer for future quick dinners. Here's the recipe divided in half for those of you who might not want to make 8 gallons of it:

1 bottle of white wine
Juice of 2 limes
1 carton of stock. We used chicken, but I think beef or veggie would work just fine.
2 medium cans of pumpkin (plain - not the spiced pumpkin pie type)
Diced onion, celery, and carrots. About 2 cups of each.
A big spoonful of minced garlic
Diced smokey meats (ham, sausage, bacon, whatever you have), I used ham, andouille sausage, and venison keilbasa.
Fresh Cilantro
Garam Marsala
Salt to taste.
Whatever other spices you might like to add. I threw in some dried chillis, paprika, ground cloves and bay leaves

Simmer that all together for about 2 hours.

Then add a bag of dried lentils. Simmer that for about 45 minutes or until the lentils are soft.

Then add 2 medium cans of coconut milk. Simmer for 15 minutes.
