I'm participating in a chili cook-off tomorrow at work, and we have to come up with a name for our chili. I'm at a loss. Here is the gist of the recipe. It is very, very flavorful but not really hot. olive oil 1 onion, chopped 1 red bell pepper, chopped 1 green bell pepper, chopped 1c shredded carrots 3 cloves garlic, chopped 1 lb lean ground turkey 3tbs cumin 1tbs chili powder 1 lb thick & chunky salsa 1tbs tomato paste 3c low fat chicken broth 2 cans black beans, drained and rinsed Add oil to pot at medium heat. Add vegetables. Cook until onions are soft (8-10min). Add turkey. After turkey is cooked, stir in everything else. Reduce heat and simmer for 1 hour, or until liquid reduces and chili thickens. Good on its own but excellent with Fritos. Whatcha got?
