The lady gave it a 9 which means it was spectacular.
I have mine rare, she likes it medium and I was spot on with both.
Grill marks are from the cast iron griddle she bought me for my last birthday. My ridiculously sensitive fire alarm doesn't like it when i get it smoking but it does steaks perfectly.l
Kept the burner as low as it could go and didn't let the pan smoke.
Did about 90 seconds then turned them 90 degrees, another 90. Flip over, repeat, let sit (did it on warm plates which made a difference IMO) and served it with sweet potato fries and onions sauteed in garlic and chilli.
Got an 8.5 out of 10 by the wife, she wolfed it down whereas usually she'll leave quite a lot of steak if I'm doing ribeye or sirloin.
