I had carnitas tacos last night at Seniorita's in Bloomfield, NJ. DERICIOUS!

I was thinking of looking up a good carne asada recipe just yesterday.

I gotta eat.
Got roasted chicken legs,fire roasted corn,a mushroom pilaf and salad calling.
 
Seriously. Mrs w made meatloaf so I had a little if that but I can't wait for this to be done. The bulk of it is for meals during the week though.
 
We do carnitas a couple of times a month. We do ours a bit different, but with similar results.

It's one of my favorite meals.

Carnitas is one of my favorite things to make too.

Plus you can make a huge batch and freeze the extra. It thaws and reheats most excellently well, and then you have carnitas again! With almost no effort.
 
I'm glad I didn't see this thread Sunday. I'd have to have had Mexican food twice in one day, thanks to you!

Carnitas is my favorite, but since my daughter and wife won't eat pork (well, my daughter will make an exception for Nuske's bacon :grin:) I'll never be making that... :(
