Made a fairly good veggie chilli last night

Poor old Geordie's array...
On the healthy eating / no boozing wagon after 2 weeks of 24 hour all inclusive in Cancun :embarrassed:

Really easy too:
Green and red pepper
Courgette
Red onion
Tin of kidney beans
Carton of pasatta
Various spices (mexican seasoning, chilli powder, ground pepper, garlic salt, cayenne and a few more)

Roughly dice the veg
Drain the beans

Stick in the slow cooker
Add the pasatta and spices.
Stir
Cook on low for 4+ hours.

Turned out really nice, almost like a ratatouie (which you could easily do by changing the spices I suppose)



The good news is there's plenty left over so I got to have some for lunch today and it'll do tomorrow too :grin:
