Mojo Request Low-carb diet blues

My wife was informed that her AC1 indicates she is "pre-diabetic", so she (well, we -- I'm on board with her) are on a diet -- no more than 35-45 carbs with every meal. For a carnivore, this diet would probably be a breeze, but we eat beef no more than perhaps once every other week, and she will not eat any pork or lamb. In the event, I lost four pounds over the past week, but gained back one this weekend (The fridge is a coquettish bitch who knows my weak spots).

Anybody have some good pointers on how to eat low-carb without lots of meat? I'm getting pretty tired of chef's salads!

I've been low carb since New Years. No sugar, no bread. Tagged in at 182 this morning, started at 203 Jan 1. I'm gonna hit 178 and have a few slices of pizza, lol.

Anyway, you need meat and fat. Almonds are a good low carb food/snack. Salmon is great as well. Eggs: good. Chicken with the skin is good.

Lots of green veggies: spinach, kale, broccoli, cauliflower, etc... are good. I eat approx 6 cups of veggies a day. Avoid starchy and high carb veggies.

Doctors are telling everyone and their dog that they are pre-diabetic lately. I don't know if the standard got lowered or what...

Fish/seafood is a good alternative to land meat. Also beans, lentils, etc.

Eggs and cheese. Nuts.

There are a lot of foods that can fit.

You can even get carb free bread and pasta that's different but pretty good.
Bread recipe if you want to make it yourself. There are many other recipes, but they pretty follow this idea.

Ramen? Sure.
Use a veggie spiral cutter and run zucchini through it or find some carb free noodles.

Avocados are a great source of good fats and potassium.

Doing the low carb thing requires some awareness of what are referred to as macronutrients. For the most part that's the stuff that you see listed on nutrient labels on food. Make sure you get your salts, including sodium, potassium, and magnesium. Use supplements if you have to.
Also, don't over do the fluids. You'll wash all your electrolytes out of your system.

Try to be careful to not over rotate and eat tons of protein like chicken. It's good, but too much will require your kidneys to work harder. The scares around keto or paleo diets are usually due to too much protein, but the whole diet gets painted with scary brush.

I was borderline pre-diabetic - just about at the level to call it pre-diabetic. I did the 30 day Bacon Experiment and lost 30 pounds. I'm transitioning to a ketogenic diet and see it as a new lifestyle. I get my blood work done again in June.

My target is 20g carbs per DAY.

Quinoa instead of rice

Spaghetti squash or zucchini cut like noodles instead of pasta

Can she eat beans? They're nutrient dense and very filling. And delicious.

Check out the slow carb diet in Tim Ferris' book 4 Hour Body. I've been on this diet for a few months now. I've dropped a ton of body fat and am in better shape than ever before. I've got abs! It's a very simple diet that is also easy to follow. if you do it right, you will never feel starved or craving shitty carb-laden food. You would need to make some modifications to the diet to fall in line with your wife's restrictions but it shouldn't be too hard.

the book also has a chapter on the 15 minute female orgasm. the title is a bit of a misnomer but the techniques are quite effective... DAMN.

I believe rice and beans make a complete protein. My local Safeway has a crazy deal on fish. $5.00 for 1 pound bags of frozen salmon, cod, and tilapia. Wild caught.
YMMV.

Awesome post. I'm gonna try that bread. I love bread.

My cholesterol and triglycerides were through the roof. Drugs (statins) and a low fat diet barely made a dent and I felt like crap.

I now take 0 meds, eat low carb and my numbers are way better. Not great, but better.

Oh, bacon, glorious bacon. Who knew?

Pretty sure rice and beans are pretty high in carbs.
Exactly.

Protein is not your goal.
High fat and low carbs are the best bet.

High fat will keep you from getting hungry between meals.
And it's not the devil you think it is. It will actually turn all of the bad health markers around to good levels when coupled with low carbs.

The whole trick in beating this pre-diabetic thing is to stop triggering insulin secretion.
Carbs trigger insulin secretion.

There will be a change in your blood test results. If your doctor understands the ketogenic diet, they won't freak out on the numbers. The one that most are alarmed by is triglycerides. The count will go up. But it's not the quantity that matters, it's the size. Yes, size matters.
It's the small triglycerides that cause problems because they get stuck. On a keto diet, they'll get large and will truck right on through your bloodstream doing no harm at all.
Triglycerides are like Ubers for cholesterol, fat, and non-soluble vitamins. They jump in for the ride because otherwise they wouldn't be absorbed into the bloodstream for transport to cells that need energy. They do this because the three (tri) things that they carry are non-soluble and need the help.

When they are small, the cells will grab a bunch at a time but not get to consuming them quick enough to get them out of the way and they start to stack up and clog.
When they are large, cells just need one to get the fuel they need and that keeps things clearer in the bloodstream.
Think of it like a car carrier. What takes up less room on the road: 7 cars or one tuck with 7 cars on it?
It's a vague analogy, but it gets the thought process going in the right direction.

Thats awesome about the 0 meds.
My doctor said I have a choice: statins or lifestyle change.
I chose bacon. :)

If you do Facebook, check out The Bacon Experiment.
It's a free group and everything you need to know to do the Bacon fasting diet is there.
There are a lot of posts to keto recipes as well. So, it's not just bacon bacon bacon.

The guy that runs the page just started up a separate thing called Beyond The Bacon Experiment that costs to join, but it's different than just eating bacon. From what I understand it's a month-long group coaching thing to get in to the keto lifestyle and includes recipes, eating guides, etc. I believe it is a one-time, one-month thing - like a month long seminar.
I'm not pushing that. I just wanted everyone to be aware of that and not be put off when you see it. I didn't join that as I pretty much hit my goals on the bacon diet and I can find enough info on my own to maintain.
He is trying to make it his job, but the free Bacon group is still free and always will be.

This thread is proof that the internet is a shitty source of info for nutrition and diet. Beans are an excellent food choice for prediabetic folks. Rigorous research and consultation with a nutritionist is critical for things like this.

We just bought some Oat flour, almond flour, and some other stuff that may help with bread-like products. Also, we've always had beans and lentils in our diet -- probably continue and add to that. My wife has always pushed the "healthy fats" (e.g. olive oil, avacados, etc.) My main problem is what do do for non-meat main courses and replacements for grains (FYI, we're finding out that it really doesn't matter -- Quinoa, faro, etc. all seem to have as many carbs as brown rice.) It's a real learning experience, and I appreciate these recipe links!

Avoid all grains including oats. Grains cause massive insulin spikes.

I've been on the Keto thing since 1/23/17. I still can't balance my macros, never get enough fat. Use a macro calculator to see what your daily intake should be. Here's a good one: https://keto-calculator.ankerl.com/en-us

Also use an app like MyFitnessPal to track your carbs/calories. Avocados are a super food on this diet. We make fat bombs out of coconut oil and various things, it's a weird concept to start eating lots of fat. Bacon is another staple, as is cheese. Google keto recipes, there are copycats for almost everything, just be prepared to invest in a food scale and shit like almond flour and artificial sweetener. I'm down 17 pounds in just over two months, 10 away from my goal... Good luck!

That's what we're trying to do. Today, I had a sandwich of leftover turkey meatloaf on one slice of Milton's "Healthy Whole Grain" bread (17 gms) for breakfast at 7am -- it's 9:30 now and I am still not hungry, so that apparently worked!

Eating bread = eating grains.
