Hum tried bone in ribeye and it wasn't that great. I told them I like my steaks super rare / verging on blue but the waiter suggested getting it medium.

It was rarer near the bone and great but the outher more done parts were far too chewy and dry for my liking.

The sides were great right enough.
 
What kind of steak house waiter suggests medium? Especially to someone that said they like it rare. That's puzzling.

It was labelled on the menu as suggested to be done medium - I asked the waiter about it and he said it's to help melt the marbling melt and engance the flavour - I dunno, that ribeye I posted the other week got about 30 seconds on each side of my skillet and it was perfect.

Lesson learned.
 
Rare is the way to go with a rib eye. The waiter is a pratt.

The menu suggested it medium so I'm thinking it's more the chef's fault - he's just passing on what he's been told to say.

There's plenty of great steak restaurants about, I can deal with one going on the blacklist :embarrassed:
