I'm not a big fan of raw spinach in a salad. Cooked is a different matter entirely. My mom's idea of spinach was to take some Birds Eye out of the freezer and dump it into a pot of boiling water.... then call it quits ....no salt or spices at all. The stuff was vile. Once I learned to cook, I bought fresh and never looked back. Learned how to do southern style greens in the Corps. I still make 'em that way sometimes.
I love greens and always thought the ones I ate were collard greens. But I know a lot of people also make mustard greens in the same way. What have I been eating? (Southern New Orleans greens)
