Cooking goat.

I love eating goat, but I always end up overcooking it—especially with the extended cooking times I get living at elevation. Do I have to just cook the rest of the meal and toss in the goat for a few minutes at the end? Use a pressure cooker? Find a better supplier?

Cabrito!

I actually don't have experience cooking goat... need to try it... my first instinct would be low and slow on the smoker. Braising also seems to be a popular method for goat. And sous vide, which is on my mind because it came up in another nearby thread, is supposed to excel at getting meat cooked through but not overcooked.
