Anyone got good curry or stew recipes?

If you're needing a thickener, you're not doing it right :wink:

Clearly - I put in 2 tins of coconut milk, could probably have gotten away with one.

Had leftovers tonight - I shlepped in a bunch of west indian hot sauce stuff I found in the fridge and it was actualy pretty good :thu:

coconut cream instead of coconut milk works well for this sort of problem (basically the same stuff, but less water/more fat, so it's thicker)
 
I just wrong it worth curry powder, coconut milk, vegetables that I want, meat cut thin and a bit of corn starch.

Usually comes out pretty good. Of course salt or spy sauce to taste.

I don't think there are any real rules to it.
