I personally am not a fan of sucking the juice out of the head, but many do. But if you saute them in a bit of butter, garlic, shallots and white wine, they are amazing. If you can't stomach the thought of a shrimp having a head, go to safeway and check the frozen seafood case. Look for these:
You will not be disappointed. So much better than the blanched, flavorless shrimp most people buy.
Also, leaving the tail on as a handle is a southern thing. My wife actually eats the tails. Adds a bit of crunch and is good fiber, according to her.
