Just heard rocking around the Christmas tree on the radio

Anyway I plan on doing a ham on the kamado so thought I'd do a test run so I don't make an arse of it.

Will be ready in around 2-3 hours all going to plan, I present the triple irn bru smoked ham:

That looks delicious. I think we’re having Christmas at home this year, I should order a good ham and do rum ham.
 
Only took 2.5-3 hours too as it was cooked reasonably hot so I'll be able to do it love on Christmas day too

Yeah it wasn't even done ironically!

Weve tickets to see the Muppets Christmas Carol with live orchestra at the end of the month, I'll consider it fair game for tunes after that.

Ham was delicious and stupidly juicy.
 
Did another one, smoked this time so ends up double smoked.

Made them into shawarma. Absolutely banging.

Also realised that one joint is absolutely not going to feed the 15 we're expecting for Christmas. Need to decide whether to do another ham or add turkey for tradition.

I just did a spatchcocked turkey and, while I've had better turkey in my life, it was really good. As a bonus, the leftovers are fantastic as they aren't all dry and overcooked. I did turkey noodle soup yesterday and it was great. Tonight is turkey korma. That's a good thing, as I had to get a giant turkey because hosting was sprung on us at the last minute.
 
I want to do this, but Mrs DCF won’t let me.


We used to get 25 to 28 pound, organic, locally grown, very expensive turkeys every year. Then he had marital problems and he moved to Florida. But, until that happened, they were spectacular, not just the taste, that was so awesome but, also, the presentation. The site of the huge bird on the table was breathtaking . One year, I spent too much time in the family room with "the guys" watching football. When I came back to the kitchen, my mother in law and sister in law had cut it all up.

What we have settled into- Middle child's girlfriend gets a free 16 lb. turkey from work every year. We cook that with no stuffing in it. In another roaster is the stuffing with a separate turkey breast on top of it.

We had 24, including ourselves this year. Son and his wife from Arizona. His in laws from Lombard and Oak Park, his bro in law brought a tofurkey. Wife's sister, their grown children and their kids and a bunch more.

I should of gone back and got another pic when everybody was there.

I'm thinking osso buco. It is a crowd pleaser and it gives me an excuse to also make risotto.

It's tremendous. Really easy too. Could substitute the Irn Bru with any soda too if you want the recipe (there's a coke rub Im going to try soon.

Anyway, the fancy wholesale butcher we ordered from last year seems to have gone to the wall so I've just bought 2 of the same hams from Lidl.

GOing to cook them at the week, cool, slice, vac 0ac and freeze then hit up with the sous vide on Christmas so there's no pressure at all
 
Now that I think about it, I might do lamb shanks over polenta with a red wine reduction, brussels sprouts, and a side of potatoes. And maybe brownies top with vanilla ice cream for dessert. I bought this cool brownie pan that has a grid of dividers so you get a bunch of perfect brownies without cutting, I need to use it.

Lamb shanks are a favorite in our house. :letseat:
 
I got a big honkin rib roast at the local Giant. Through a complicated system of club card, bonus points, online coupon, and general subterfuge I was able to snag just under 10 lbs for 5.99/lb.

So that would be a swell Christmas dinner, but we’re already going to a friend’s house for Christmas dinner where they’ll be serving….rib roast.

So I guess Im gonna cut the bones off to make stock and then use that to make French onion soup. Then I’m gonna cut about 8 nice ribeyes. I’ll grill half of them for the family on NYE (with the onion soup and some asparagus) and then freeze the other 4 for something in the future.
 
Almost had a disaster. Was doing a few last minute unplanned cooks the week running up to Christmas and my sous vide stick broke. If I hadn't decided to do this unplanned cook I'd have found out it was broken on Christmas morning when trying to reheat my ham and veg!

Amazon had a new one delivered before I left for work the following morning and all went well. Much less aggro than last year trying to do it all on the day.

My mum has very kindly left all of the borrowed crockery etc "just incase" we decide to host again next year Mrs jbj isn't very impressed, I'm already thinking of menu inspiration.
 
I ended up having a big vegetarian lunch from an Indian food truck. I don’t remember what dinner was.
