I am thinking of a creamy taco sauce

I have noticed a few times watching food porn, that the fancy taco trucks sometimes squeeze a ribbon of a creamy sauce on their tacos. I think I want in on that.

I poked around on the internet and didn't find any recipes that I really want to try... but I did get enough ideas to just try and wing it.

I'm going to blender garlic and cilantro, and then mix it up with sour creme and some hot sauce to give it a zing. Then I'm going to serve it on tacos with homemade tortillas, carnitas, and some fresh salsa.

Have any of you done something similar?
 
I don't think I've ever had anything like that. Certainly not in Mexico. It does sound good though.

This thread could have taken a bad turn, but I helped it stay the course.

OK, as promised I blended sour creme with cilantro and garlic and hot sauce. Then it seemed like it needed some sweetness so I added some ketchup, and it was pretty good. Everyone liked it. However it wasn't as flavorful as what I had in mind. I'll need to think of a way to kick it up a notch next time.

What made me think of ketchup was having watched a Mexican cook make ceviche (Veracruz-style) a while back. It had ketchup and orange soda. I was horrified, until I tasted some and couldn't stop eating it. :tongue:
 
You could try mixing some canned chipotle peppers in sauce or adobo sauce with sour cream or mayo or ranch along with your cilantro and garlic, that would certainly give it a kick.
