I need to do some research...I've seen them do it on cooking shows and it doesn't seem too hard but I only have the ability to pan-fry....

do you use the three step method for breading....flour, egg, breading....
make sure your oil is hot enough too....that will help....

mark....do you have a cast iron skillet....that would be best for pan frying....use the breading method above and you should be good to go....

Two big keys - and Warren just mentioned one of them...
1. Oil Temp - It's gotta be right.
2. Cold Chicken. After you coat your chicken, put it in the fridge for at least an hour to cool off.
We have a deep fat fryer, but have never actually used it. I do chicken in a pan and generally bake my hot wings...
