Hadn't made this in years. I don't know why - It's really good and pretty easy.
Take some boneless pork chops and slice a pocket into them with a sharp knife, so that you have a sort of "Pork Pita"
Make a batch of stove top cornbread stuffing mix. When it's done, mix in some onions and peppers, and bacon if you're not afraid of a double pork flavor explosion.
Use some seasoning of your choice on the outside of the pork pockets, and stuff the cornbread/onion/pepper/bacon filling into the inside. Put them in a pan, and cover with Cream of Mushroom soup (the condensed kind, undiluted)
Bake at about 350 for about 45 minutes.
