Whats your current favorite?

I just got this on Sunday from the Mexican market "El Metate"..better than I thought it would be. It says it is made with Habaneros and the flavor is kind of smoky with a heat that takes a little while to get going...I end up eating a bunch before it gets hot and then I'm in trouble biggrin

My mother-in-law gave me the recipee for her hot sauce. Now every so often I go ahead and make a big batch of it. stirthepot It's more along the lines of a salsa though but it goes good with everything!

Sorry about that- I was at work and didn't have the recipe but here it is...

ingredients for hot sauce:
4 jalapenos
4 of those yellow chilies (i forgot the name but they're usually right beside the jalapenos. they're also bigger.)
28 oz can crushed tomato
pepper
salt
garlic (2-4 cloves)

boil chilies until tender (about 5 mins.)
cut off the stems
blend the chilies, crushed tomato, garlic, salt, pepper

it's a good idea to start off with 2 jalapenos and 1 yellow chili. you could always add more to taste.

Here's a recipe for carne con chili-
ingredients
about 10-12 thin cut pork chops w/ bone
hot sauce recipe

make the hot sauce recipe
cut the pork chops into little pieces (about 1/2"-3/4")
cut off some fat and use it to fry the chops
cook the pieces of pork and bone in a pan
season with salt and pepper
cook until done
transfer pork to a large pot
add sauce
simmer for about 15 minutes so all the flavors blend
serve with tortillas and beans

as it simmers, some of the heat from the chili is gone so it's a good idea to make the sauce a little hotter than you'd like.

It's not super spicy but the flavor is really good. I use this sauce for everything- tacos, burritos...

let me know how it turned out!
my father in law makes this guacamole that's good too. It's not like the normal guacamole we're all used to but more like a sauce. I'll have to remember to get that one too.

Mark, that El Yucateco you posted is probably my overall favorite sauce. It has a little bit of a kick, and incredible flavor. You can tell it is made from habs, most hab sauces lose that smoky flavor but that one doesnt. I cant really eat any sort of Mexican/southwestern food without that stuff.

I also have to mention Stubb's. It is FANTASTIC. Its sort of like a bbq sauce, so it isnt useable on dishes that you'd use a normal sauce for, but with things like chicken nuggets it is amazing.

Of course, I cant live on just one or 2 sauces. I need a variety. I have 2 downstairs from some friends in Texas that they sent me that I still havent even tried yet. Maybe I should do that tomorrow. This is my hot sauce cupboard. embarrased0

I think I just have the Tapatio, El Yucatero, Tabasco (which I'm not very into anymore) and some other random sauce I got somewhere and I'm not too into...I'll look for the Stubbs..I think I can get that out here...

The "yucatero" is pretty interesting...not what I expected. It is also slow in getting hot so I end up eating a ton of it too fast and then my head starts burning messedup0 biggrin

I might have a problem.

I just put El Yucatero in my Mac and CHeese facepalm0
