ok....here is a simple recipe for a pumpkin roll that everyone who trys it loves....i'm not allowed to show up for thanksgiving without bringing at least one!!

this is not a dieter's friend!

pumpkin roll

3 eggs
2/3 cup pumpkin (canned is fine)
1 cup sugar
1 teaspoon baking soda
1/2 teaspoon cinnamon
3/4 cup flour

grease a cookie sheet and line with wax or parchment paper
pour mix on cookie sheet and sprinkle with chopped nuts

bake at 375 degrees for 15 minutes

turn on towel (nuts side down)
take of wax/parchment paper - sprinkle with white sugar
let cool completely

filling:

2 tablespoons soft margarine
8 oz cream cheese (softened)
3/4 teaspoon vanilla
1 cup 10x sugar

mix filling ingredients until smooth and spread on cooled cake
roll like a jelly roll
wrap in foil and refrigerate overnight

slice and enjoy!

let me know how you like it....it's a perfect thanksgiving dessert....something different from the traditional pies and such....

I havent made anything sweet in awhile, mostly cause i bought a buttload of candy for halloween and only had 1 kid show up. :mad:

yeah i had a lot of candy left over too....every time i walk past the bowl i grab a piece and eat it....that's what i get for buying candy that i liked.... :facepalm:
