Me, Mrs. P, micwalt, and a few of micwalt's friends took a cooking class when we were in New Orleans. It was one of our favorite parts of the trip. :o

They certainly know how to cook down there.

My family is going down to New Orleans in a couple months but I can't go because I can't get off work. My grandma is even paying for the whole trip for everyone.... My wife is even going. Man that makes me :'(

Here's where we took the class.

http://www.neworleansschoolofcooking.com/

We didn't actually get to cook, but Big Kev (the chef) did a great job, and there was a huge mirror over the stove so you could see everything he did from anywhere in the room.

The class lasted 3 or 4 hours, and you got to stuff yourself on the food he cooked and they even passed out free beer (or root beer...it was only about 11:30 AM when we ate).

It only cost about $25 per person, so it wasn't really any more expensive than just going to a decent local restaurant.

That's the name I was looking for.

I lurked a bit on discusscooking.com and it looked pretty interesting (plus it looks exactly like HC) but it's blocked at work. :(

I just double checked.

We must have been there on Monday, because he did red beans & rice, cornbread (the best freakin' cornbread I have ever eaten by far), pecan pie (again, the best I've ever eaten) and pralines.

Class runs from 10:00 to 12:30 and costs $27. Well worth it.

I would like to take some French cooking classes.

I tried making a souffle once. Tasted good but looked like poo.
