I absolutely love Thai curry dishes.

My favorite is masaman i think its called. To die for.

Also, Thai food is by far the hottest thing served in a public restaurant that i have ever eaten, for you hot pepper dudes. If you order a 5 on the scale 1-5, you better be ready.

I'm not much of a curry fan. Tried it again last week with the same results. idn_smilie

A good Indian/Pakistani style curry is like making love to a beautiful woman...um, well, I don't know where I'm going with that one..but trust me, it's good stuff :o

Key ingredients: Garlic, Ginger, Cumin, Coriander, Turmeric, Chillies. Also, Cinnamon bark, Cloves, Cardomom and Bay leaves.

With those ingredients, a chopped onion, chopped tomato and/or yoghurt you have the makings of a killer sauce to which you simply add your meat of choice. I tend to use the small, thin "finger chillies" which are fairly fierce, or the fatter "bullet" chillies which aren't that hot but have a fantastic flavour.

It sounds like there are different types of curry as well...

Curry can be absolutely amazing. The Indian stuff I get is considered curry. Makhani, Korma, Tikka Masala, etc. The best I have ever had was just called "green beef curry" at a local restaraunt. Seriously, I cant describe how good the stuff was. love0

Yep...in the UK the most popular is the Indian/Pakistani stuff, although most of the restaurants are in fact Bangladeshi run...long story...:o

My parents emigrated to Uganda, East Africa, in the 50's and the kind of food I grew up with was North Indian/Pakistani with an East African accent..so we added stuff like coconut milk, yams and all sorts of veggies that wouldn't be traditionally Indian.

Those sound like very tasty variations...

Curry and coconut milk is pure and total win.
