I have never had them. Not sure where to get them, but I am betting Wholey's would have them (BIG seafood store here in Pittsburgh). For a year or so now I have been really wanting to try them.
If I were to get some, what should I do with them?

I have eaten plenty, but never cooked them. I like them a lot. Like a little lobster. Bust off the tail, just suck the juice on the body side, and then tear open the part that looks like a little lobster tail and eat the meat. As long as you dont get freaked out by bug looking things, its really good. hahaha.
I imagine just steam them, or perhaps boil them in water with spices.

Wholey's has pretty much anything imaginable. Hell, I found RABBIT down there. They're a 10 minute drive from my office too. I need to head over there real soon and pick up some crawfish. I should think you would be able to find cheaper salmon where you are though, no?

They were at every restaurant in texas. I can't do it though. I refuse to suck the juice out of those little cockroaches.

I don't think there's a law that says if you don't suck the head that someone's gonna jump out of the shadows with a shotgun. biggrin
I've had them before and I've never done that. Something about sucking the guts out of them never appealed to me either. I just eat the tails and chuck the rest whether it pisses of the southerners or not. Hell...I live in Canada for goodness sakes!

The guts MUST be sucked.

I've had exactly one crawfish at a chinese buffet in San Antonio about 8 years ago. It was good and I'd readily eat them again but I haven't run into any.

Im sure there are huge cats in the mississippi I just never heard of using crawfish to catch them. Bass, yes, catfish no. Speaking of which, it's gonna be getting warm soon. I gotta go get my license. The smallmouth on the rivers here in early spring are FANTASTIC.

The Allegheny. But really, any river around here has insane smallmouth during the spring. All season, really, but in the spring they hit fast and hard, and on pretty much anything. I've had them hit on jig heads as soon as they hit the water.

Well, I guess I'm the only Cajun here. I've eaten, cooked, and even caught crawfish as a job for a while. You gotta watch some of that store bought crawfish. Some are from China. You don't have to suck the head. It's the fat inside the head you're after.
As for Gar, I've caught it and ate it. Caught one over 6 foot once. Clean those bastards and cut them up into roast, makes a great gravy when you pot roast them. If you get live crawfish, I can tell you what to use and how to boil them. After the boil. if you have left-overs, you can make a crawfish etouffe'.

Crawfish is big in Sweden. We eat it in August at huge parties, "kräftskivor", and drink a lot of beer and vodka to it. It often looks like this; outside in slightly cold weather, but we also often have paper hats and moons. You can buy crawfish in fish stores raw or boiled. Those who are more skilled in cooking never buy them boiled, but often use their own secret cooking recipes at home.
A friend of mine once had invited a girl for dinner, and since it was in August he decided to serve her crawfish. He went to the best fish market in town and got some crawfish, which he took home. The next day he went back to the fish market to buy something else, and the guy in the shop asked if the crawfish had been good. Yes, my friend answered, but they were slightly tough to eat. Ok, the guy said, how long did you boil them? Boil them?, my friend asked.

Jmo, you should try for them sometime. They're fun. You'll see them right up by shore where I fish. They'll ALWAYS bite, but if you catch them in the right time you'd think they were sharks. I had one go after my bobber the instant it hit the water once. Problem with them is they shred whatever youve got on your hook, and their jaws are so thin and so bony it is next to impossible to actually catch one. Even if you get the hook set, they can bite through a thin steel leader.

Damn...they bite through steel leaders. Gotta get yourself some carbon fiber then. biggrin
They just look kinda freakish. Honestly, I had never heard of them before and that's why I was compelled to do a bit of 'net research.

Are they related to that fish up in Minnesota that they shoot with a .22 before bringing in the boat? I forget what they are called.

Spoonbill snagging season just opened here. I don't go, but have friends who do. About the best tasting fish I've had.
And crawfish are really good too. Used to have a buddy whose Grandmother owned several small ponds and sold them for bait. He would go raid the ponds and bring us a couple 5 gallon buckets full. We'd boil them up, usually along with some spoonbill or crappie. Awesome!

I just have the kids go collect a bunch down at the creek.
They never share though.:HB:
I'll try to get some pictures this spring. When they are done eating, my deck looks like a crawfish bomb exploded, and the yellowjackets love it:facepalm:
They went crawfishing one day and came home with this instead.

Could have been Bagnell Dam, that's just a few miles from here. They often snag 5 or 6 footers. Haven't heard of anyone getting any yet this year, but I think the season just started earlier in the week.

I can't believe snagging is an allowed form of fishing. . .just seems. . . strange. . .
