View Full Version : Pierogi Casserole

Ingredients

9 lasagna noodles
4 or 5 medium potatoes
2 C shredded cheddar
1/2 C chopped onion
1/2 C margarine
salt and pepper to taste


Cook noodles about 15 minutes, drain and set aside.
Cook potatoes and make regular mashed potatoes. Mix in the cheese and beat.

Assembly

Place 3 noodles in the bottom of a 11 3/4 x 7 1/2 inch casserole dish.
Add half of the mashed potato mixture.
Place 3 more noodles on top of the mashed potatoes.
Then put the remaining mashed potatoes in.
Cover with the last 3 noodles.

Saute the onions in margarine until wilted. Pour over the top layer of noodles.
Cover with foil and bake at 350deg F for 20 minutes.

That does sound very good. Im trying to cut back carbs, and that is pretty much ALL carbs.


You guys are not being very nice to me. :mad:

carbs are not bad, in fact 60% of what you eat should be carbs. I disapprove of the atkins.

Well, all i know is it worked for me. I cut them out completely for about 6 weeks, then added some back in in very small amounts. I went from 212 down to 170 and felt great. Only bummer is i missed crunchy snacks like kettle chips and such. hahaha.

I know there are people on both sides of the arguement, i just know i did it and it worked, and i never felt better. idn_smilie

I may make a nutrition thread for you guys. I knew you had done the Atkins before, but make sure you add some carbs back in and pull back the protein some when you get where you want.

yeah i did that. Not for health reasons as much as i was dying for pizza. biggrin


Im doing 30 minutes a night on the elliptical now, so carbs arent so bad. I just dont have any close to bed time.

I'm actually starting with portion control today. If I can go from pig to half-pig I'm sure that will help. smi
