Yeah, woks work fine if you can get them hot enough. We're on propane, so the only way to go is a deep fryer.

As long as the oil is at temp AND the chicken is completely covered it's fine.

I hate pan fried chicken where half the chicken is cooking and the other half is raw. It always turns out WAY too greasy.
