Actually its an adaption of my "beans" recipe....I'm just soaking the beans at the moment but here is what I am working with:
16 oz Black Beans
Boneless Pork Shoulder (about 3-4 lbs)
4 Jalapeno Peppers
1 Anaheim Chili
A few fresh cloves of garlic
1 large red onion
Salt and Pepper and maybe some hot sauce as we get to the end....
I used to do this with pinto beans, bell peppers and whatever else I could find in the kitchen but I figured I would try something a little different today. I didn't have time to soak the beans overnight so I am doing a "quick soak" and they'll stand for an our now that I've boiled them for a few minutes.
Once the beans are back to cooking I'm going to brown the onion, cubed pork, garlic, salt and pepper before I combine it all with the beans and peppers to simmer for a while...I'll post pictures as I go ;D

That sounds absolutely fantastic, and a good candidate for my lunches. I can make a batch and freeze portions. Freezing is a compromise i know, but just cooking for one you dont have lots of options. ;D
Payday is this thursday, i'll get ingredients and try it myself.

Freezing it for lunches is part of the plan...I don;t think anyone else in the house will eat it and we're storing up food for when my wife is laid up :)
I'll start posting pictures in a few hours....

Oh yeah..I just threw in the shoulder bone to simmer in the beans....everything is combined now ;D

2:25 and its simmered down close to 2" of water...its got a ways to go but I tasted it and it seemed a little lacking so I'm trying what I do sometimes with my regular bean recipe which is brown sugar...seems to help it but I just put a little in to get it started...

It was doing well and then we had to go out to dinner so I turned the heat off....it was basically cooked after about 5 hours but I want it to simmer down more....I just restarted it...the bowl I had before I left was great, though.... :)

Not pretty, but it really tastes good. Probably more pork than black beans...spicy with a little sweetness from the brown sugar I added about half way through. I'll probably not simmer it down too much farther and make it more of a soup at this point....
